Beat the Summer Heat with these Summer Treats

Cool down this summer with a burst of a fruity flavor with these refreshing recipes. The summer heat can get intense but these refreshing treats should help to keep you cool and hydrated. In today’s blog post we will be looking at 3 summer treats recipes, peach strawberry yogurt popsicles, watermelon sorbet, and watermelon aqua fresco. Enjoy these recipes this summer season!
Peach Strawberry Yogurt Popsicles

Ingredients
- 3 cups strawberries, 1 1/2 cup pureed
- 3 cups peaches, peeled and sliced, 1 1/2 cup pureed
- 2 tbp honey
- 2/3 cup greek yogurt
Steps
- Puree strawberries with 4 tbsps honey in a blender and then set it aside. Clean blender, and then puree sliced peaches with 2 tsps of honey, and set that aside.
- Layer the popsicles in the order of 2 tsps strawberry puree, 1 tsp yogurt, 2 tsps peach puree and repeat. Make sure that fruit puree is your last layer.
- Tap the mold on the counter to help the layers settle. Then use a small spoon to drag vertically from top to bottom to create a swirled pattern.
- Gently tap the molds on the counter to remove air bubbles. Insert popsicle sticks and then freeze for at least 6 hours or overnight before enjoying.

Watermelon Sorbet

Ingredients
- 2 cups watermelon cubed
- 1/2 lime juiced
- Honey or other sweetener to taste
Steps
- Dice watermelon, and place the cubes into the freezer over night or until the watermelon is completely frozen.
- Place the frozen watermelon cubes into the food processor and add some of the lime juice. Add a little bit of the lime at first and then add more to taste.
- Process the watermelon and lime juice in the food processor until it has a sorbet-like texture.
- For a sweeter sorbet add in a little honey or another sweetener to taste.
- Serve immediately!

Watermelon Aqua Fresca

Ingredients
- 4 cups cubed seeded watermelon
- 1/2 cup water
- 1/2 cup white sugar
- 4 slices lime
- 24 fresh mint leaves
- 8 cups ice, add more or less as needed
Steps
- Combine watermelon and water in a blender, blend until smooth. Add sugar to taste.
- Cut the lime slices in half and place half a lime slice and 3 mint leaves into each of the 8 glasses. Crush the mint and lime to release the juice, then fill each glass with 1 cup of ice
- Pour watermelon aqua fresca over ice in each glass, stir before enjoying!
